Coto Makassar
Coto Makassar is food that comes from South Sulawesi, Makassar exactly my heritage. Which usually make this meal in my house is the papah. Doi was good. Created a new event if the feast.
Material:
1 kg of beef parts sengkel (a soft, says aja ama abang2 in the market, certainly in the know ..)
1 / 2 kg lung (fried, separate, enter the jar)
2 liters of water to wash rice / starch
5 stalk lemongrass, crushed
5 bay leaves
250 grams peanuts, fried, mashed
3 tablespoons cooking oil, for sauteing
5 cm ginger, crushed
1 vertebra galangal, smashed
note: actually if willing, also use 300 grams of tripe, hard boiled & 300 grams of boiled beef liver cooked. Kalo mo pake beginian, dijadiin beef 1 / 2 kg aja. But because my family of meat eaters (FYI, we are all middle name Sumanto), liver and tripe fit, and the meat dibanyakin.
Mashed Seasoning:
10 cloves garlic
8 cloves roasted hazelnut
1sdm roasted coriander
1 tsp roasted cumin
1 tablespoon salt
1 teaspoon pepper grains.
Complement:
fried onions
scallions
sliced celery
Sambal tauco:
- Blend the 10 pieces of red onion, 5 cloves garlic, chili 10 pieces of braised short curly.
- 100 grams tauco a pan with 6 tablespoons of cooking oil until cooked, add salt and brown sugar to taste. Mix the ingredients together who've just mashed.
Method:
1. Kalo pake tripe or liver, boiled separately until tender, remove, drain, cut into dice.
2. Boil beef soup with water, lemon grass, galangal, ginger, and bay leaves. Once cooked lift, drained, diced.
3. Panasin oil, saute the blended ingredients until fragrant, put in broth, add fried peanuts, bring to a boil.
4. Presentation: Prepare a bowl, fill with meat and tripe and liver and lung also distinguished from the jar earlier. Sprinkle with fried onions (delicious banyak2), sliced green onion and celery, rice cake and serve with sauce taoco.
5. Serve warm.
PS: add the soy sauce, salt, and lime juice if necessary. Oh yes, much better if cooked the same again boyfriend, let him who makes, we ongkang2 foot. Hyahahha!
